Beating the Heat! (Recipe Included!)

According to the local weatherman (although not always reliable) it seems as though we're in for an upcoming heat wave! I for one feel as though I was meant for life in the arctic... at the slightest bit of heat, mere seconds after stepping outdoors I often feel as though I'm melting. It's no secret then, that as a lover of adventure and the outdoors, I must find ways to combat the heat!

It's a good thing I live on an island! There's almost always watermelon lying around, so I've decided to share one of my all time favourites for cooling down.

I introduce you to the signature Aim-mojito-melon-with-mint. Yes, I know, the name's not very clever, but I promise you it's delicious. LiveScience.com actually swears by this superfruit noting that watermelons are mostly water — about 92 percent — but this refreshing fruit is soaked with nutrients. Each juicy bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids. There's even a modest amount of potassium. Plus, this quintessential summer snack is fat-free, very low in sodium and has only 40 calories per cup. 

So here's how you can make the already super-wonderful-watermelon even better!

Ingredients:
    1.5 c. cubed frozen watermelon
    3-5 oz water (depending how on thick you want it)
    1 tbsp or less of honey (optional)
    1 juiced lime
    4-5 mint sprigs
    (Optional) 1-3 oz Bacardi yum... I mean rum.

Instructions:
    Blend all ingredients together.
    Garnish with some fresh sprigs of mint if you want to make it pretty.




For those of you wanting a bit more out of the entire watermelon you most likely bought, I also suggest you try my personal recipe for rum-infused-melon balls, the featured image for this post. Of course, you can also enjoy your watermelon plain, but where's the fun in that? 

Ingredients:
    1.5 c. balled watermelon
    3-5 oz Bacardi rum
    1/2 juiced lime
    2-3 mint sprigs

Instructions:
    Place melon balls into a dish, and mix in all ingredients. 
    Refrigerate for at least 45 minutes, covered.
    Garnish with some fresh sprigs of mint if you want to make it pretty.
    Serve chilled!
